I always have my phone with me, is it possible to use the AW Ultra without cellular? Will the battery last longer?
 
Yes of course. It only uses more battery if the cellular is on. You can activate it, and keep it off-zero battery usage.
Activate it and keep in on but don't make calls-low battery usage (or none?). Or just don't activate it (save money)

There maybe other modes, but you get the drift.

That’s how I use mine. I don’t have a comparison so can’t comment with real data on battery life, plus it would be highly dependent on usage
 
I don't even have mine activated, and just turn the cellular radio off in the Watch's Control Center.

As others have said the cellular connectivity is optional and not required. Whether the battery lasts longer I can’t comment as my last three watches have all been cellular and I have the cellular connectivity activated.
