I have been googling and watching YouTube videos and finally realized I should have come straight to the experts.

I have a series 5 Apple Watch that I got through Sprint, with cellular LTE service. We have just switched from Sprint to Spectrum Mobile. There is a long backstory there, but after 20 years with Sprint, we have finally thrown in the towel. Spectrum doesn't support wearable devices so I know I won't have cellular service on the watch, and that's fine. I am getting a new iPhone from them and wondering what is the procedure with the watch - do I unpair it from my old phone before backing up and transfer to the new phone, or will that all the watch stuff just transfer over with all the data? And what can I expect the watch to do once paired to the new phone on Spectrum? I don't care about making calls on it (obviously as that's not an option with Spectrum) but since it is an LTE device, I'm not sure which functions work strictly from pairing with the phone and what requires the LTE service. As long as I can use my apps and gets text messages I'm a happy camper.
