I'm constantly having issues since 10.7.1.

Apps are failing to launch and bouncing for an age and then when they stop they are not responding and require a Force Quit. Also, finder is constantly crashing and not then relaunching. If I try to log out it just freezes.

Anyone else experiencing a deterioration in performance since the 10.7.1 release? Is there a way to roll back to 10.7.0?
 
You can roll back with a Time Machine backup or by reinstalling Lion. 10.7.1 is stable. You should find the actual source of the problem.

Unfortunately my time machine has written over the backups from 10.7.0, so I don't think I'd be able to get back to that install.

Any errors in system.log or kernel.log when you see problems?

How would I find this?

You can use the Console app, or alternatively use Terminal (if you are comfortable with the command line) and find these files in /var/log...
