Back Up Old Apple Watch to Ultra

Still waiting for UPS to deliver Apple Watch Ultra, but was wondering if it is possible to essentially backup my current AWS7 to the Ultra since it is configured how I like it or do I have to start over? I know with iPhone this is very easy to do but wasn’t sure about AW.

If you unpair your S7, it will save a backup that you can restore to your Ultra.
