My grandson updated my ATV 4K to the latest beta (14.6) and it screwed up my HomeKit functionality. None of the HK automations work now... I can't find a way to roll back that update and reset the ATV 4K to factory settings. Any help out there?

Nothing you can do other than wait for the next beta revision or to disable Beta updates and then wait until the next official software update.
As you’re on 14.6 I’m not sure you’re even able to install the next official software version as that’s going to be 14.5.
This is one of the reasons why Apple warns users to only use Beta on a device that isn’t your main device as if there’s any issues you’re stuck with them until they’re fixed.
