I may be buying a used ipod touch 3G soon and I'm wondering if there is a way to back up apps that the original owner purchased.

I probably wont have it set up to sync with my itunes and might even restore it at some point so i dont want to lose them if i can help it.
 
Get yourself a Western Digital Passport and back your apps on that. With 500GB storage, it's more than enough. These are cheap as chips so you can buy another one for extra backup of your backup just in case.

Why would you need that much storage? The OP is asking about the iPod Touch. I don't think you can back up apps that you haven't purchased anyway. If the OP ever purchases another app, syncing would delete the non-purchased apps. If the apps are that important they should buy the apps.
 
You won't be able to do that. You would need to activate his account on your iTunes in order for the apps to work. If you try and sync it, the apps will just be removed.
