I must have a new hard drive installed and I want to save as much data as posible. I have an iMac 24" and I know it has a cd/dvd burner but I have never copied pictures, addresses, etc. by this means. How can I make copies of my personal data so I can reload it after the new hard drive is installed? Thanks in advance!

If your running leopard, use time machine. This will backup your entire machine.

OR

Get a copy of carbon cloner - This will clone the contents of your drive.
 
I've used Target Disk Mode and OS X Disk Utility to migrate to another drive.

The Disk Utility Restore function looks something like this:
