I have several years of email stored in Outlook 2011. I'm using Google Apps with my domain and would like to move all of my emails to it. However, I'd like to be able to backup all of my messages and keep a local copy.

The goal is that should something happen down the road like I'm no longer happy with Google Apps, I could move my email to another host and restore all those messages.

Is it possible? Is there anything I have to do specifically?

Searching online didn't give a really accurate answer.
 
Not sure I understand the question. But perhaps:

Under Mail:
1. Select the folder(s) you want to store locally,
2. Click on "Mailbox" at the top,
3. Click on "Archive Mailbox".
