iPhone 12 Pro Max Backing up iPhone Photos/Videos/Camera Roll Variance?

Just got a m1max, prior to this I was on windows, which I just used windows explorer or photos in windows to backup iPhone camera roll manually. Did a little googling and it appears there's are a few options for iphones/macOS.

Photos app - which doesn't appear to allow import from iPhone directly onto an externalHD.

Image Capture - which does allow direct import to externalHD

The issue with the latter, after download/transfer was complete I usually do a count/GB recon. But my iPhone says I have 4,814 items, Image Capture says there are 5,385, then the actual HD drive/folder says it transferred 6,108 files?
 
For a test, count out and select 100 or 500 photos from your iPhone Photos app and copy them over with image capture. Then compare.
Also check your photo transfer settings in Settings > Photos and scroll to the bottom.
