I just spent some time making some iTunes playlists and want to make a backup of them just in case anything goes wrong. Am I safe to say that just making a copy of the iTunes .plist files (I found 4 of them) will do the job?

Yes ONLY if you want to back up what the playlist is. that will NOT backup your music. If you need to back up your music ../user/music/iTunes/iTunes music/ I for one trust in my mac, i don't think that's something to worry about much.
