I'm subscribing to the 3-2-1 philosophy. My question would be the 2 on-site b/u's, do you let the HDDs run 24/7? Or, maybe just the TM, with CCC on once weekly.

That is what I do. TM 24/7 and a CCC once a week or so. Also online using Arq.
