Backing up then removing an app

I'm about to finish Max Payne and I want to remove it when I'm done because its a huge app. In the future I'd like to play it again so how can I keep a backup of the save data without the app being on the iPad? Will future backups only replace new save data for an app and not touch the save data for apps that aren't currently on the iPad?

I haven't used it myself, but it claims it can access application data files. If it works as advertised, you should be able to save your game data, and restore it when you reinstall the app at a future date.
