Backtracking in Print Dialog

Good morning, everyone!

I'm new to this board, but have been a Mac user since the early 90s. My question relates to printing in Ventura. The 'Print Grayscale' option seems to have disappeared. Is there any work-around for this?

I need to print a scanned pencil sketch, but it keeps coming our with green overtones.

Thanks for any help you might offer.
