Backup 5s & restore 6+?

friends, i am using 5S 64GB and bought 6+ 128GB, i am trying taking the complete backup including apps in icloud and restoring it on 6+ but the all apps require to download from net, then i tried taking the backup in itunes and restored it again but still the same thing, i dont want the phone to download all apps (automatic download) is there any way out?
Secondly, there are few apps like whatsapp viber tango etc etc which contains many chats in 5S, will this procedure of backup and restore also restore the chats on the new phone?

What I can think of are the followings.
1) You can restore as a new phone, then download apps you need.
2) If you want the contents or settings from your 5S, *delete apps on the 5S first (BUT you must plug it in or backup your 5S first) before you restore your 6+
3) Same for Itunes, delete apps you don't need, then restore your 6+
Note: Your data on Whatsapp, Viber and Tango should be there once restore on 6+ (but not as new restore).
