In regards to the apple watch backups which are stored on the iPhone, are those backed up themselves to the PC? I need to restore my iphone, I assume I have to un-pair and re-pair my apple watch. Will the apple watch backup be on the iPhone once I restore/resync the iPhone?
 
Yes, it's stored in your iPhone backup. When you unpair the Watch, your iPhone will create a backup of it.

Backups can be viewed/deleted in iPhone's settings. Settings > General > Usage > Manage Storage (under Storage) > Apple Watch

I'm just going to bump this because I haven't found it, though, I admittedly haven't looked:

Can you see the list of Watch backups and remove them? It looks like I've got two backups from the same "watch" but from two different  Watches (I had my swapped out). I don't care enough to dwell on it, but this post reminded me and I'd like to have as little useless data floating around as possible.
