If I open iTunes, right-click on my ipod and select backup? Are these being backed up?

-Calendar
-Contacts
-Notes
-Settings

And if I backup my jailbroken 1.0, can I restore onto my official 2.0 firmware?
 
idk about 1.0 - 2.0, but it worked from 1st gen to 2nd gen with the settings and notes idk bout the rest
 
So it definitely worked for Settings and Notes at least? Anybody know if anymore can be restored?
 
1. You will want to restore from 1.0 to 2.1, because otherwise you will lose a good deal of space from the previous jailbreak.

Restore from 1.0 to 2.1? So I backup 1.0, upgrade to 2.1 then restore again?
 
No, just press restore and buy 2.1, it will do both of those at the same time.

Thanks I'll do that then. But before I do, do you know if all my data (such as notes, calendar, contacts) will migrate to the new firmware?

No it will not because to get rid of the jailbreak leftovers, we have to delete everything. Make sure you have all the data on your computer, and email notes to yourself. All data will be lost when you restore. Be sure to click do not restore from backup or your jailbreak information will still be present but unusable.

That is partially true. The jailbreak stuff will seem to disappear(apps won't show up anymore, themes will be gone, etc), but it will still be present in your iPod's memory, so you will lose disk space.
