Backup with out updating?

So my current iPhone is 100% out of space. I am planning on getting an iPhone 4 in a couple weeks, but I want to still continue uploading songs, movies, ect. onto my iTunes, but I want to BACKUP my iPhone, So that when I do get my new one that it will be 100% up to date, but I DONT want to Sync and Update it with new songs and stuff.. Does this make sense? How do I back it up with out updating it? Thanks
