Are back ups ok to back up everything or should I start fresh on a new phone. I don't want to loose texts tho. Is there a way to back up and not loose that?

Delete all Apps, email & accounts, music, photos, etc. but not your texts. Turn off iCloud, Find My iPhone, and other network connected features. Then do a backup and restore to the new iPhone and install everything else from scratch.

Backup to icloud or computer?
 
IMHO it's much ado about noting, leftover habits from desktop OS updates. Yes there's the occasional person who has some bizarre problem, but for most people it's no issue to just do a backup/restore cycle with no special contortions needed.

As to the icloud vs computer backup question; either will work but computer will likely be faster restore and also gives you more ability to copy the backup to a safe spot just in case.
