I have been reading reviews about the airport express and have seen numerous people say they like it because it is portable so they can set it up in the hotel when they travel. I am confused by this. What can they do with the Airport Express if they do not have an ethernet hookup for internet?

You can use it to make a hotel ethernet into a wireless network. It's just very small compared to other wireless routers, so it's very portable.
