Basic Mail appearance question

I have been trying to find where I can change the small picture that Mail inserts in the top right corner of my outgoing mail.

Right now it's showing a gingerbread man. I have looked through Mail
preferences but can't find the command to remove or change the image.

I know it exists "somewhere" but where?

how can you get rid of the picture completely?

Pretty sure that picture does not get sent with your emails...
Some one correct me if I am wrong?
