I recently got a brand new battery and charger for my MBP (2009, 13").

I have read the Mac batteries have a chip inside that takes care of charging, etc.

My question - when my Mac is "charged" (which, in my experience, is anywhere from 97% to 100%), if I remove the charger for 10 seconds, then put it back - is this bad for the battery?

This happens to me 3 or 4 times a day, as I have to move my laptop in my work.
 
You copy+paste this in every thread that contains the word "battery".
That's because it answers nearly every battery question asked. That's the point of creating a FAQ (frequently asked questions).
The answer to my question is not in your linked FAQ.
Yes, it absolutely is.

It is also normal that your battery may not charge to 100%. The battery may appear to stop charging between 93 percent and 99 percent, because the batteries are designed to avoid short discharge/charge cycles in order to prolong the overall life of the battery.

My question wasn't about when it stops charging, but I suppose that is related to taking out the charger when it is charged.

The 2nd sentence answers the question:
