I feel like all these battery test are useless with Apple's Adaptive Power and the fact more than half of the world has SIM models on the 17 which offer significantly less battery life (approx 2.5hrs) than their eSIM counterparts withstanding the Air model which is the only equal.
Reviewers aren't stating what models they have which already skews results for some and once adaptive power kicks in after individual usage then all bets are off and it truly becomes your mileage may vary (YMMV). So for everyone with an Air I wouldn't get too worked up about it.
