Hello,
(note I didn't notice this in the beta versions of iOS 8 on iPhone 5s)

Setting -> General -> Usage -> Battery Usage

Once I unplug from a full charge, the values are reset to 0 (Usage and Standby).

All goes well for a few hours, then it resets to '-' and the
"Usage times will be shown after the iPhone is fully charged" msg is shown.

I haven't put it back on the charger or turn off/reboot.

It goes for about 8 hours and then resets.

Any ideas why? Or has anyone seen similar?
 
It usually does the "-" thing after a springboard crash (just happens) or a hard reset (holding both home and lock button until Apple logo appears again).
Have you done a hard reset? If not, it's possible some app is causing your phone to crash and reload. That's not easily noticed, because you'll just think your phone woke to the lock screen for no reason.

Chat with apple online and make sure you do the diagnostics it asks you to run before the chat - or when they email you a link - because that'll help them identify which app may be causing the crash.
