just bought a new bbq for the summer!

what are some good 'rubs' and 'marinates' you guys have used that you loved.

im talking about homemade.
 
GQ (the magazine) usually has a pretty good list of homemade marinates and rubs in their summer issue(s). Can't say I've ever tried my hand at any of them but they sure sound delicious.

On a related note; my last year of college my roommates and I were rather drunk and decided to marinade our steaks in Natty Light. Can't say that worked out well. :p

Natty works great for beer can chicken or beer boiled brats! These were staples in college, as they incorporate beer, and they're easy enough to make that you can start drinking the beer before you start cooking!

I usually try to make a rub from scratch every time we grill. Just get a whole bunch of herbs and spices, read about them a bit, then mix em together and try em out!

I also love making barbecue sauces that incorporate molasses. Mmm. :)
 
I've tried numerous times to make a solid rub and I never can seem to find a recipe that's as good as some of the store bought rubs.

The Grill Mates Sweet & Smoky is delicious.
 
This one is really good on a grilled pork loin. Even better if you cut slits and put garlic cloves inside.

Southwest Rub
Good for: red meat, pork, poultry, seafood, vegetables
2 teaspoons pure chile powder
2 teaspoons granulated garlic
2 teaspoons paprika
2 teaspoons kosher salt
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
Makes about 1

sounds great. i love garlic!!
 
Chicken breasts marinated in yogurt are delicious. Just throw some herbs (thyme is delicious with chicken) along with garlic and onion in some plain yogurt. It really tenderizes the meat and gives a nice flavour.
 
Hoisin-Orange Duck is wonderful (also works with chicken)-

4 tablespoons orange marmalade
4 tablespoons orange juice
3 tablespoons white wine vinegar
3 tablespoons hoisin sauce
A few chilli flakes

Enough for 8-10 duck legs.
 
I just cooked an amazing prime rib on the rotisserie this past weekend. I brushed it with extra virgin olive oil and then rolled it in a mixture of dried onion flakes, sea salt, rosemary and steak spice. Awesome.
