Examples:
1) Notifications get sent to your phone instead of your watch when your phone is in use EXCEPT if you're in a call then it still sends them to the watch so you don't have to pull the phone away from your ear to see what it says
2) World time clock utility has the astronomy earth faces for each time zone
3) Calendar complication shows you next appointment that is context dependent - if you have a back to back meeting it shows the next appointment sooner than if you have a gap before the next appointment
4) Tapping the weather display circle "clock" switches to temperature by hour and precipitation by hour
