Do you restore as new and than erase all content and settings?

Or just do a reset on the phone and sell it without restoring as new.

depends on what firmware you have, if its jailbroken and if you want to jailbreak it again (or if you can).

If it is on FW 3.1.2 and you don't have your SHSH's on Sauriks server, then you can't restore to 3.1.2 and then you can not UNLOCK your 3GS, so you could just reset it, but make sure all your data is off and all pics, contacts etc.

If the buyer is just buying it unjailbroken I would just do a full restore.
 
After you hit restore and it goes through the process it takes your to setup as new or back up. I don't want it to sync after that point so just disconnect and pop out the sim and sell the phone. that's it?
