I´ve just ordered the mac mini with M1 processor and has to get a decent monitor to use with it
If I go with a IPS monitor with 2560x1440 is there any benefits to get one with USB-C connection instead of HDMI 2.0?

For 8 bpc, USB-C can do higher refresh rate up to 240 Hz (HDMI 2.0 is limited to 144 Hz).
For 10 bpc, USB-C can do 200 Hz and HDMI 2.0 can do 110 Hz.

If you're doing 60 Hz then it doesn't matter.

If you're doing 4K, 60Hz can only do 8 bpc for HDMI 2.0

DSC can do more for DisplayPort over USB-C.

HDMI 2.0 doesn't have DSC but has chroma sub sampling to allow higher bpc or refresh rate.
DSC is much better quality compared to chroma sub sampling because DSC can choose what information to throw away.
