Thinking about either a 2016 MBP or a more fully specced out 2015. I have a lot of peripherals that I don't want to buy dongles for.

What would be the best 2015 configuration in terms of CPU, etc?

I'm NOT an expert by any means but did quite a bit of research and last year bought my daughter a new MBP - got her the 13" I7, 16 GB 256 memory (purchased a Samsung 500gb SSD external) and she has been extremely happy. This Christmas - for my younger kids) I purchased 2 new touch bar 13" models and added the 16gb but only went with the standard I5.
