I can't seem to get iMessage working, and at the moment I can't be bothered wiping my iPhone completely and restoring it as a new iPhone... So what is the best alternative to iMessage? Oh, and it had to be able to work on iPod Touches as well as iPhones :)

Whatsapp has the largest userbase by far, that's something to take into account.
 
Kik is used by many people. Whatsapp is also really popular but it isn't in the App Store at the moment due to a security flaw. A new version will be up soon.
 
Whatsapp is better than Kik, and it's back on the app store.

Kik is nice but it works more like an IM client with usernames and buddy lists and such. Whatsapp uses your phone number and your address book like SMS does. Also, Whatsapp has way more features.
 
Text free works fine for me. It is what I use on my iphone and ipad when texting with anyone who is not on ios5.
 
Oh crap. I didn't read where the OP said it should work on an iPod Touch. In that case Kik is definitely the best option.
