So I have my 500GB HD divided equally between OS X 10.10.5 and Windows 7.
It was installed using Boot Camp.

How do I go about removing Windows and everything installed on the windows side of OS/removing the partition?
And how do I set the partition back to the OS X side?

It's easy.
Boot to OS X
Launch the Boot Camp Assistant.
Follow the links to remove the Windows partition.
And - that's it for the Windows partition - gone.
While booted to OS X, you can go to System Preferences/Startup Disk pane, and make sure that your OS X drive is selected as the boot disk.
And - done.

I'm running out of memory and never use Windows anymore...
Unless I resize the partition? Is that easy to do as well?

It deletes the whole partition and reassigns the space to the OSX partition, so everything.
 
Yes, exactly. If you remove the Boot Camp partition, using the Boot Camp Assistant (which is the best method to do that), then everything Windows, and everything that you have installed in Windows will be gone. The partition is removed, and your OS X partition will be resized to include that deleted Windows partition. So, you won't have to manually do anything. The Boot Camp Assistant takes care of everything about removing that partition.
