you do know that you have to be jailbroken to use themes right?

good themes (the ones I like, I know some people don't like this type of theme) are perfect storm 2.0 and pre-tend (I don't jailbreak or use themes anymore, but those 2 were my favorites when I did)

in terms of apps, I enjoy FMylife, Facebook, Pandora, Last.FM, Assassins creed, Need For speed (amazing game), terminator salvation, and tetris

if your looking for 3.0 capable apps (push, iPod built in, etc), theres not that many of those yet. You'll have to wait for those

I noticed the keyboard doesn't change when jailbroken now, I guess they need to update a lot of stuff to work with 3.0
