I'm looking for alternatives to a 15" macbook pro, ideally in the same price range or higher:

must have:
1) All the commonly used ports, including ethernet and hdmi
2) quad core / rx560 or higher
3) quiet under load
4) vanilla macOS components, no messing with kext files
5) great touchpad

nice to have:
more ram, better graphics, good keyboard, options for on site replacements.

Is it possible ?
 
I don't want to discourage you, but hackintoshing a desktop vs. hackintoshing a laptop is about akin to a 2-year college degree vs. a Ph.D. It's extremely challenging to get things working even 90% correctly. Nothing is impossible, but a 100% experience is not likely. Your biggest hurdle is that most laptops that have a discrete GPU also have an integrated GPU and do graphics switching. However, the way Apple does graphics switching is not compatible with the way other manufacturers do it. Even if you buy a laptop with a high-end gpu, odds are you will be stuck using the Intel HD Graphics while booted into macOS.

Trust me, it is going to be easier to deal with Apple's current batch of MacBook Pro shortcomings than deal with the endless tweaking of trying to get macOS running the way you want on generic mobile hardware. Hackintoshing is great for desktops when you need computational horse-power or are trying to keep things cheap. In those cases, you generally don't care what it looks like nor if it is as energy efficient as possible. Laptops are generally the opposite in expectations, and Apple is probably the best computer hardware maker when it comes to optimization.
