If one plans to order an iMac (27" i7) and have OWC upgrade the machine to SSD only (no HDD), which configuration would be the best to order from Apple?

Maybe you should ask OWC about it.

I would say order the one with however much power you'll need as well as the cheapest hard drive option, since it'll be removed and replaced with the OWC SSD.

I believe OWC themselves say they prefer the one that doesn't have the Apple-installed SSD, since they fit their own bracket etc if you're keeping the original HD and adding an SSD. This could just be for the older, original 27" iMac. Not sure about the current gen - best to ask OWC themselves.
