Best Method to Setup

Unsure how to setup my new six the best possible way. I'd start from Scratch but I don't want to lose my music, tones, notes, Etc. I do NOT want my photo's to come over, i'd rather start fresh with my camera roll. To complicate things, my iphone is synced with a library for a macbook I no longer have.

Can I restore with Icloud and somehow not get the photos to come back over? Any ideas?
