I want to convert a pdf image file into a text file. I know that this can be done with Google Docs, Evernote, etc. but I'm not sure which one is the most reliable and accurate. Anybody have suggestions?

I use Evernote, I just forward non searchable PDFs to my Evernote account, and then a few hours later they are made searchable by the EN servers. You might need a premium account for that, though, it's not clear to me whether that feature is covered in the free accounts.
 
I use both AbbyFineReader and Adobe Acrobat. They both came with my Fujitsu ScanSnap S1500M scanner. My workflow is to scan them directly into my DevonThink Pro Office database.

I do not convert them into "text"... instead they get converted into "PDF+Text". The database is completely searchable and indexed. This is the core of my "paperless office".
