I've been looking at SSD drives for my late 2008 MacBook Pro and am trying to figure out what is the best/fastest drive. Any thoughts?

Take the top 3 or 4 SSDs that will fit in your MBP. Write down their prices.

Then look into your wallet/purse. Count your money, write that down.

Choose the model which is closest to, but does not exceed, the amount of money you have available to spend.

That is your "best" model. All the datum on speed, battery, color, are irrelevant if you cannot buy it.

The X25-M's are the undisputed best.

The first moment they came out they sold out at $229. Now they are going for $279.

Are there plans for a larger X25-M? 160GB isn't quite enough.
There are plenty of fabulous non-Intel 250GB SSD's out there - OCZ Vertex and Summit, Crucial, Corsair etc etc. Compare prices. You will probably notice differences there more than any real-world performance differences.
