so i just recently jailbroke my iphone 3G with os 3.0 and i was wondering what everyones favorite tweaks are using SSH....i already did silly things like changing all the audio notifications to custom sounds.

i did that...although i cant figure out how to create my own .png files for the bubbles. i had to use someone elses that that uploaded on a forum...but id rather try and make my own...i hope it doesnt involve any photoshop knowledge.
Well, you can SSH just about anything in or out
You can edit .js, .css and .plist files to make the phone do just about anything
Just be careful when you overwrite original system files, I would back them up before you overwrite them.

Can you do anything via SSH on a jailed phone other than manage photos and use general storage (which you can do in Windows anyway)??
WinSCP isn't even connecting to my non-jailbroken 3GS. Guessing I'd need to jb if I want to get in there and start tweaking files and such?

Yep! Even though I prefer Diskaid there is SO much you can do with these type of programs its unreal.
Yes, you cant use SSH unless your phone is jailbroken and you have installed OpenSSH thru Cydia.
Not sure what you are asking. Try reading just about every thread here. Chances are everything mentioned here can be done with SSH.
Ringtones!
You can download ringtones from your computer. I would use RealPlayer to get videos off of YouTube. To do this:
1.) Download ANYTHING you would like as a ringtone, make sure it can be changed to .m4a format.
2.) SSH into your phone via WinSCP or DiskAid, and travel to the Library->Ringtones directory.
3.)Change the file you want as your ringtone to the .m4a format, to do this, simply rename the file. If you can't rename the file, go to folder options and make sure that file extensions are shown.
4.)Simply clicky clicky, draggy draggy, and you have your new ringtone!
