Using JVC HR-S7600U VCR, which features digital time base correction. Have both Roxio VHS to DVD for Mac and Elgato Video Capture for digitizing VHS tapes. Elgato digitizes files in either .mp4 or H.264 formats; Roxio digitizes in .mov format. Being new to video, it's my impression that the larger the file, the better the video quality. My chief goal is to "squeeze" as much data as possible from the original VHS tapes. Do I go with the largest file size (.mov)? Storage space is not an issue. Appreciate any advice (in layman's terms, please).

H.264 makes reasonably good video quality in somewhat small files. For digitizing VHS tapes, that may be adequate. I use the Roxio video capture device, and the resulting .MOV files are in pretty good quality. Though with Mac OS soon dropping 32-bit support, unless Roxio comes out with a 64-bit version of their video capture app, I may have to switch to Elgato or something.
