My MacBook pro doesn’t have enough internal storage so I can’t back up my 11 Pro via finder to create a proper backup from which I could then restore the iPhone 12 Pro with, is there another way of doing this or do I just need to clear up my MacBook so that I have enough free space to perform a backup?
 
New versions of iOS allow direct device to device transfer during initial setup. That's what I've done for my recent iPhones.

Wow, how would I go about doing that exactly? It transfer everything that’s on the 11 pro to the 12 Pro? Does it do it over Bluetooth or WiFi or what exactly?
It transfers all apps, settings etc just as an official backup restore through Finder on the Mac would?

Yes, it transfers from 11 Pro to 12 Pro directly. I think it transfers via WiFi but I believe you need to have both Bluetooth and WiFi enabled. When you first turn on the the 12 Pro, it should give you the option for automatic setup and there's a circle of blue dots that you scan with your old device.

I've had to re-enter my email passwords for the Mail app but for the most part, the restore seems to be as complete as you'd get with iTunes restore. Caveat, if an app has been deleted from the App Store, you won't be able to restore that app on the new phone.
