I just bought a 2018 15" MBP. I will reinstall some of the applications I have on my 2015 15" MBP, but only some. And bring over some, but only some of the data. What is the best way to accomplish these tasks?

I do have time machine backups, and enough space on my NAS to copy the entire 512 GB drive.
 
re-install everything application wise to get nice clean applications
Then bring the data over that you require manually

I think a full clone is often easier than Time Machine at this stage as everything is laid out where it was (and you can keep it for a few months or longer for insurance)
