Best way to jailbreak + unlock 3GS with 3.1(7C144); 05.11.07 and 359.3????

I'm seeking expert advice on the following:

Desperately need to jb and unlock 3GS with:
Firmware: 3.1(7C144)
Baseband: 05.11.07
Bootloader: 359.3

Would pwnage3.1.5 perform all the steps required? I’m a newbie to this forum and am searching for the best option to perform a seemless, quick and easy jailbreak and unlock. I’ve been reading forums for a week steady. Came across the jailbreakmatrix and noticed there are a number of different tools (blackrain, redsn0w, etc) available. Have access to a mac but am a windows weenie. I will be travelling to Europe and having an extended stay, so, the ability to drop in a local SIM card for calls + sms would be the best option. Don’t have a clue if a ‘pay-as-you-go’ data plan exists. Any help would greatly be appreciated.

If you're on windows I'd go with blackrain from www.blackra1n.com
Im not sure if Redsnow would JB a 3.1 3GS.

Redsn0w to jailbreak (Easiest), Blacksn0w to unlock. Pwnage Tool is not an option unless the phone was previously jailbroken and SHSH was saved.

Blacksn0w is not the greatest tool (has some issues) but it is currently the only choice to unlock 5.11.xx

Don't try to restore first, just jailbreak, then unlock.
