In preparation for Mountain Lion, what would be the best way to set up my MacBook Pro.

I have a 120gb SSD using SATA 3 and a 500gb HD using SATA 1.5. I'm going to want to have OS X along with Windows 7 bootcamped.

Currently I have my 500 GB formatted as exFat so I can use it on both my Windows and OS X side, but I have a problem... I'm letting iTunes stay on my SSD while storing the songs on my exFat drive. After every reboot, it changes back to storing the iTunes media folder on my SSD even after I ask it to use the exFat.

Is this because it's exFat? Does it have to be stored on an HFS drive?
