I might be inheriting someone's 1st rev CD 17" MBP. If I wanted to upgrade the hard drive to a higher capacity model, would it be best to take my chances taking it apart myself, or is this one of those services you can get at an Apple Store?

Apple store doesn't upgrade.
You can pay Apple Authorized Service Provider to upgrade it for you.
