If I want to EDIT a document I get, what is the best to use? I've heard Pages is ok, Quickoffice may not be compatible with my bluetooth keyboard (http://support.quickoffice.com/index.php?_m=knowledgebase&_a=viewarticle&kbarticleid=13)...any other thoughts?

As far as I know, quickoffice should work fine with your keyboard. The keyboard is connecting with the iPad, not individual apps.
Kinda ... but each app actually seems to have some day in how it works with the 'non letter' keys!
Pages - full keyboard support
Docs to Go - (finally) full keyboard support
QuickOffice - doesn't recognize arrow keys amongst others.
And that is using the Apple keyboard Dock!
Personally I bopped between Docs to Go and QuickOffice, with Pages left behind because of I/O issues. But with Docs to Go 4.0 update it is now my fave, with Pages coming up just short, and QuickOffice feeling quaint and dated at this point ...
