I just thought of this-- for distributing a single, jailbroken app, couldn't you just open the source in Xcode and build it to your device?

Probably someone else has thought of this... and it doesn't work.
Just to be sure..

If you are a developer, sure, you could do this.
 
Look at the number of "help I accidentally upgraded to 3.1.3 version baseband and now i can't use sn0wbreeze to unlock my ipod touch's bootrom" threads on this forum.

This is why your idea, while technically feasible, probably won't become a viable method of widespread app distribution anytime soon ;)
