I have a 2.53GHz 13" MBP with 4GB of memory which mainly gets used for photoshop and Aperture. It's a bit slow processing big raw files but apart from that works very well.

I have a few ££ sitting in my bank account and would like to upgrade to make photo processing a bit quicker. Should I bite the bullet and go for a new top spec 15" (which would give me a bit more screen too, which would be nice) or install some more memory and perhaps a bigger hard disk in the 13" and spend the balance on beer and women?

If you have the money, do it. If it's going on a credit card, wait.

I will say, I used a 2.4Ghz 13" mbp with 4gigs of RAM for a few days, and being on the 15" 2.2 quad i7 with 8gb is incredible. It is noticeably faster, even on menial tasks. I am running large data sets in stata and excel, and even copying data is quicker. Copying a few thousand points and moving them over would take 5 seconds sometimes on the 13", and on this it's instantaneous.

excellent, i'll go shopping!! anyone want to buy a 13"? :D
