With a plain software RAID0 setup with a USB enclosure, I was getting about 200MBps R/W. But with encryption enabled, write speeds seem to have dropped dramatically with a consistent 40MBps. Anybody have any idea what is going on?

I would go with the encryption/decryption sucking up all kinds of bandwidth doing its thing. Really nothing else it can be, perhaps adding some ram may help a little to give it more room in memory if it is programmed that way but I doubt it.
