I saw people criticizing Notification Center in Big Sur, because it demands a touch screen according to some.

But I think it's super convenient to have all your toggles in one place.

Bluetooth, volume, brightness, and so on are toggles I need all the time and it's nice to have them all in one place with one click.

I'm using a 2019 MacBook Pro 15" base model. Is it likely to run slower than Catalina?

EDIT: Regarding graphics, it's definitely new. Looks more "playful" and less professional, but I think we'll get used to it.
