Not sure what I made wrong. But after exporting to quicktime from FCE the video looks horrible.
It is a video of only still photos, (when I see this pics in Preview they look sharp), but when in QuickTime, they look horrible.

Am I missing something?
 
What settings are you using for the Quicktime output? (codec/compressor, bitrates, etc)

At first I only clicked to Export>QuickTime. Then I used compressor to make it a quicktime file and it now looks perfect.

What are the other options you mention (bitrates, etc)?

QuickTime is only a wrapper, not a format. You can make a variety of different formats (some very low quality, some very high) be QT files.
