I am thinking of a current (Oct. 08') 17" MBP 2.5ghz, 4GB RAM & 512MB NVIDIA 8600. I plan to connect is to my Sony 50" HDTV via DVI to watch streamed movies.
My question is if it will look good and how big can I go on this laptop?

It will look great and it can go as big as the screen can handle.

Now I'm excited to get a DVI to HDMI adapter and hook this up to my JVC RS-1 that's projecting a 125" 16:9 image :D.

You both may be a bit disappointed. Though it will be able to drive those screens, tv's are most commonly a lot lower definition than computer monitors, meaning actual screen resolution (number of pixels) and pixel density (how much space the pixels are spread over, or how large each pixel is). The exception would be the new 2k and 4k tvs being released in Japan, which actually have higher resolution than most computer monitors.

Oh, I'm not worried about that. I fully understand that it will look much better on my computer screen than it will on such a large screen. However, I have access to 1080p content, that's what I'm interested in displaying - not day-to-day use.
